No Mixer Banana Bread Recipe Circa 1986

Here we go again, recreating recipes from my 1980s cooking and baking collections. Allow me to present “No Mixer Banana Bread“. Who doesn’t love banana bread?  Sure, you could purchase it at a store, but why buy it when it’s so simple to bake at home.  In addition to being easy, you make it with staples you probably already have in your pantry and ‘frig.  Not only that but when it comes to the bananas, the worse they look, the better they taste. Overripe bananas are the sweet secret to a delicious and moist quick bread.

First of all, you’ll be delighted to know that you won’t be using a mixer for this recipe. 

We’re doing it the old fashioned way with a wooden spoon. This is terrific because:

  1. There are fewer utensils to cleanup.
  2. If your doggy is like mine and sensitive to loud noises, he or she won’t be going nuts because of the mixer.
  3. Last, but not least, the sound of a wooden spoon mixing batter certainly won’t wake the baby.

This recipe for No Mixer Banana Bread is a cinch to put together. As a matter of fact, I assisted my 12-year-old grandson, Joe, as he made it. We had a blast and, I’m happy to say, he’s pretty pleased with how it turned out.

When you compare this almost 40-year-old recipe to newer ones, you see that the basic ingredients are the same. The most popular add-ins then and now are nuts and chocolate chips. What’s your favorite?

The No Mixer Banana Bread was a hit. It was moist, not too sweet, and had a hint of the banana flavor. Although it was good plain, we also tried it warm with butter, peanut butter, cinnamon sugar butter, and with a schmear of cream cheese. Oh, yeah, Joe also liked it with vanilla ice cream, sliced bananas, and raspberries. Yum, y’all.

      • Letting you know, Barbara, I made it… Yum!
        Being vegan I used 2 vegan eggs –
        1 tablespoon ground flaxseeds and 3 tablespoons water x 2
        I replaced the melted butter with vegan mayonnaise &
        Instead of sugar I added 1/4 cup maple syrup…
        Now many would think this maybe wouldn’t work!!! However, my man K and I have had a couple of slices each the past 2 days with a little left over for today and tomorrow.
        I can’t thank you enough. I’ve been looking for an easy, moist banana bread & this is it… 😀
